Cornstarch and potato starch thicken differently
Cornstarch makes smooth, glossy sauces and tolerates a brief simmer; potato starch thickens quickly and can create a clear, silky sauce but may lose its best texture under prolonged boiling. For frying, both can form crisp coatings, with potato starch often producing a craggy, brittle crunch. The exact result depends on moisture, coating, oil, and recipe.

Make a cold slurry first
Mix either starch with cold water or another cold liquid until smooth before adding it to hot sauce. Move the pan to a stable position, keep hands clear of steam, and pour the slurry gradually while stirring to prevent lumps and splashes. Boiling liquid can scald.
Bring cornstarch sauce to the level of heat the recipe specifies so it thickens fully. Add potato starch near the end and avoid hard prolonged boiling. Re-stir every slurry immediately before pouring because starch settles.
Adjust amount by observation

Use starch for frying deliberately
